Morning Mocha Smoothie

A delightful Morning Mocha Smoothie with coffee, cocoa, and soy milk blended perfectly for a refreshing and healthy diabetes-friendly pick-me-up. Optional frozen mocha as well!

Equipment

  • 1 High speed blender

Ingredients  

  • 2 cups unsweetened soy milk
  • 1 cup strong brewed coffee, cooled
  • 2 tbsp unsweetened cocoa powder
  • 1-2 tbsp chocolate syrup (based on sweetness preference)
  • 1 tbsp pure maple syrup
  • 1/4 tsp vanilla extract

Instructions 

  • In a blender, combine soy milk, coffee, cocoa powder, chocolate syrup, maple syrup, and vanilla extract.
  • Blend all the ingredients together until smooth and well-combined.
  • Divide the Morning Mocha Smoothie into two glasses with ice and enjoy immediately. Or, for a frozen smoothie, pour the milk into ice cube trays and freeze for at least 4 hours or overnight. Blend cubes with the rest of the ingredients until smooth, divide between two glasses, and enjoy!

Notes

Variations
  • For a creamier texture, substitute the unsweetened soy milk with unsweetened almond milk or pea milk. If you want to add richness and extra protein, add a tablespoon of almond butter or peanut butter. 
Tips
  • To really bring out the smoothie’s coffee flavor, consider using cold brew coffee instead of regular brewed coffee. Adjust the sweetness level to your preference by increasing or decreasing the amount of chocolate syrup and maple syrup.
