About Elizabeth

(She/Her)

Hi, I’m Elizabeth Valencia, a Registered Dietitian based in Los Angeles, CA. My journey with nutrition has been deeply personal. During my education, I became very rigid with food and stopped eating many of my traditional Mexican dishes because I had been taught they were “unhealthy.” Over time, I met dietitians from different cultural backgrounds who helped me see that our cultural foods are not only meaningful but also incredibly nourishing.

That experience changed everything for me. Now, it’s my passion to support others in improving their health without giving up the foods they love. I help people apply nutrition in a way that works in real life—while honoring their culture, preferences, and busy schedules.

What to expect: I take a client-centered, practical approach to nutrition. That means we work together as a team to set realistic goals that fit your lifestyle—not someone else’s. This is a judgment-free space where honesty and transparency are welcomed and encouraged. I want you to leave our time together feeling confident in your ability to care for your health long after we’ve stopped working together.

I work best with individuals who are:

  • Looking to build sustainable habits—not follow another diet
  • Ready to improve their health without aiming for perfection
  • Tired of quick fixes and want a realistic, long-term approach
  • Interested in learning how to nourish themselves while honoring their culture

More about me: I was born in San Jose, CA and lived in Mexico for 7 years, where I developed a strong connection to my heritage. I recently moved to the Los Angeles area, where I live with my husband, 6-year-old daughter and our dog. When I’m not working, you’ll find me enjoying coffee, gardening, cooking, or taking long walks with the family.

What Patients Say About Elizabeth

Working with Elizabeth completely changed how I see food and my health. For the first time, I felt like I didn’t have to choose between caring for my body and enjoying the dishes I grew up with. She helped me create a plan that felt doable, not overwhelming.
Elizabeth asks all the important questions and is genuinely interested in meeting her clients where they are to improve their current eating habits.
I came to Elizabeth feeling burnt out from years of dieting. She helped me shift my mindset and build habits that actually last. I’ve lowered my A1c and blood pressure—and I’m still eating tamales with my family.
As a busy mom, I didn’t think I had time to focus on my health. But Elizabeth made it simple. Her realistic advice helped me feel more energized, confident, and less stressed about meals.
